Thoughts on Craft Beer
Our head brewer, Cormac O’Dwyer believes that it takes quality ingredients, time, care and attention to detail to create the perfect brews and this is the methodology that he employs when brewing.
All the beers are traditionally brewed and bottled on-site in Dungarvan, Co. Waterford made using only four ingredients – barley, hops, yeast and water. No chemicals are added to the beers, they are unfiltered, unpasteurised and vegan-friendly.
The core range consists of four beers – Black Rock Irish Stout, Copper Coast Irish Red Ale, Helvick Gold Irish Blonde Ale and Mine Head American Pale Ale – which are complemented with a selection of seasonal and festival beers throughout the year. Our seasonal range includes Mahon Falls Rye Pale Ale in springtime, Comeragh Challenger Irish Bitter for summer and Coffee and Oatmeal Stout for winter.
Our beers are bottle-conditioned, which means that a natural carbonation process occurs within the bottle which eliminates the need for the addition of further gasses to the beers. This can leave a slight yeast residue in the bottle which is completely natural and fine to drink. Conditioning in the bottle means we have a naturally carbonated, unfiltered and unpasteurised beer that doesn’t need any further enhancers or additives to stabilise or improve them. Store it upright, and pour it in one go and you will pour a clear pint and leave the yeast stuck to the bottom of the bottle. This is purely for aesthetics, of course, and a little yeast in the glass will just make the beer less clear but perfectly fine to drink.
Our draught offering is cask ale, dispensed by traditional hand pumps, which we supply to select ale houses throughout Ireland as well as at a range of festivals and events during the year, and kegged beer which is distributed in key kegs. Our kegged beer is also conditioned in the keg to give the same natural product as the cask and bottled versions.
As no isinglass finings are used in the brewery, all Dungarvan beers are vegan friendly.
